Located on the southwest coast of the Peloponnese, one of the most unspoiled and breath-taking landscapes in the Mediterranean, and 45 minutes’ drive from Kalamata International Airport.
The beachfront resort is part of the sustainable resort destination of Costa Navarino, a well-established tourism destination which includes 3 other resorts. It comprises of 99 suites and villas, all with outdoor terraces and sea views, along with seven restaurants and bars.
Scope of Position:
The Head of Bars is responsible to drive the development of an innovative and unique beverage program. The Head of Bars is also responsible for the smooth running and leadership of the service in the designated outlets and provides the highest level of service and professional excellence, ensuring the highest standards. He/She builds and maintains inter departmental cooperation and drives the financial and reputational success of the business.
Duties & Responsibilities:
- Manages and directs the outlets bar team daily to ensure that the operation of the department delivers consistent excellence and guest satisfaction.
- Creates a beverage program that is in line with the surroundings, utilizing fresh, local and seasonal ingredients.
- Is flexible throughout the season and drives the development of the product/offering, to ensure that the outlets continue to evolve, improve, and prosper.
- Sets standards and recipes of the beverage offering and conducts regular quality and consistency checks.
- Has excellent knowledge of all food and beverage items served within the resort.
- Conducts regular beverage trainings for Front of House and Bar personnel.
- Prepares and serves all beverages to guests according to required standards in an efficient and friendly manner, ensuring guest satisfaction.
- Ensures accurate itemized bills are available for all guests.
- Ensures appropriate processes and systems are in place to deliver both revenue and profit margins, as per budget projections.
- Handles all duties relating to ordering, requisitions and return of unusable beverages, maintaining sufficient stock levels and MEP.
- Is cognizant of quality and cost control, through close liaison with the Purchasing and Logistics Director.
- Partners with the Director of F&B and the Director of Finance to ensure costs are properly managed and departmental margins achieved.
- Organizes the bar and all related paperwork in an efficient manner to ensure successful monthly stock takes.
- Has an overview of the extensive wine and beverage stock and conducts regular spot checks after the stock take, to ensure all standards are followed.
- Ensures the appropriate presentation and cleanliness of the bar.
- Drives kind and generous service in always treating both guests and colleagues in a respectful manner.
- Ensures active and regular communication with the team through daily line ups, 1:1’s and monthly full departmental team meetings.
- Daily liaison and partnership with the kitchen team to share information, best practice and ensures a harmonious relationship between culinary and service teams, resolving any concerns after and not during service.
- Actively supports the People & Culture team in the recruitment and retention of bar colleagues.
- Partners with the People & Culture and Learning & Development to ensure all Mandarin Oriental programs are actively supported and attended by the team.
- Ensures that positive working relations with non-Food and Beverage departments are fostered, always giving co-operation.
- Encourages proactive, efficient, and effective inter-departmental communication to promote a climate of teamwork and enthusiasm.
Qualifications / Experience:
- EU passport or Residence Permit is mandatory in order to work in Greece.
- Minimum of 3 years' working experience in a similar managerial capacity, in a luxury hotel operation.
- Having previously worked in a “The World’s 50 Best Bars” is a plus.
- Ability to create new beverage concept that evolves throughout the season.
- Possibility of extending season to work at other Mandarin Oriental Hotels & Resorts.
- Experience in the administration of Food and Beverage promotions.
- Local and international food and beverage awareness.
- Fluency in English is mandatory.
- Fluency in Greek will be considered as a plus.
