Located on the southwest coast of the Peloponnese, one of the most unspoiled and breath-taking landscapes in the Mediterranean, and 45 minutes’ drive from Kalamata International Airport.
The beachfront resort is part of the sustainable resort destination of Costa Navarino, a well-established tourism destination which includes 3 other resorts. It comprises of 99 suites and villas, all with outdoor terraces and sea views, along with seven restaurants and bars.
Scope of Position:
The Head of Wines provides the highest level of service and professional excellence, being ever present in the operation and ensuring the highest standards. He/She builds and maintains inter departmental cooperation and drives the financial and reputational success of the business.
Duties & Responsibilities:
- Assists the F&B management to lead and to direct the service team daily, in order to ensure that the operation of the department delivers consistent excellence and guest satisfaction.
- Drives kind and generous service in always treating both guests and colleagues in a respectful manner.
- Ensures that the wine list and wines by the glass suggestions are consistently updated.
- Displays excellent food and wine knowledge, being able to recommend and match appropriate wines with the chosen food to all guests.
- Ensures that all beverages are correctly charged.
- Ensures appropriate processes and systems are in place to deliver both revenue and profit margins as per budget projections.
- Handles all duties relating to ordering, requisitions and return of unusable beverages, maintaining sufficient stock levels and mise en place.
- Is cognizant of quality and cost control through close liaison with the Purchasing Department.
- Partners with the Director of F&B and the Director of Finance to ensure costs are properly managed and departmental margins achieved.
- Ensures that all beverages are stored securely.
- Ensures that the cellar is always kept stocked, clean and in the appropriate operational order.
- Ensures service and Back of House areas are always kept clean and that all procedures are conducted according to the Mandarin Oriental standards.
- Organizes the cellar and all related paperwork in an efficient manner to ensure successful monthly stock takes.
- Reports and follows up all maintenance defaults to ensure efficient and professional delivery of service.
- Conducts regular wine trainings for Front of House and Bar colleagues.
- Conducts daily liaison and partnership with the kitchen team to share information, best practices and to ensure a harmonious relationship between culinary and service teams, resolving any concerns after, and not during service.
- Partners with the People & Culture and Learning & Development team to ensure all Mandarin Oriental programs are actively supported and attended by the team.
- Ensures active and regular communication with the team through daily line ups and assists the F&B management to hold regular 1:1 meetings and annual performance reviews for all direct report colleagues.
- Ensures that grooming and appearance standards are maintained to reflect an image of professionalism and care.
- Assists management with completion of office admin work.
- Attends all internal and hotel meetings required according to meetings schedule.
Mandatory Requirements:
- EU Passport or valid Residence Permit is mandatory in order to work in Greece.
- Minimum of 2 years’ working experience in a similar managerial position, in a luxury hotel/restaurant.
- Resort experience will be considered a plus.
- Minimum WSET Level 3.
- Excellent command of both written and spoken English.
- Reading, writing and verbal proficiency in Greek will be considered a plus.
- Willing to work in a rolling shifts schedule.
- Local and international food and beverage knowledge.
- Experience in performance management.
