The Role

The Cocktail Server is responsible for delivering attentive, efficient, and personalized beverage and food service, ensuring guest satisfaction throughout the dining and lounge experience. This role manages station operations, order taking, and billing with accuracy and professionalism, reflecting Mandarin Oriental’s commitment to legendary service.

 

Roles and Responsibilities


Guest Dining & Beverage Experience

  • Greet guests warmly, present menus, and offer knowledgeable recommendations on cocktails, beverages, and food pairings.
  • Take orders accurately and assist guests with selections, including signature and classic cocktails.
  • Serve beverages and food in accordance with established service standards.
  • Monitor guest satisfaction and respond promptly to requests or concerns.
  • Engage guests with confidence and professionalism, enhancing the overall bar and lounge experience.
  • Bid farewell to guests and encourage repeat visits.

Station Management & Service Flow

  • Maintain mise en place and ensure station readiness, including glassware, garnishes, and beverage tools.
  • Keep assigned areas clean, organized, and fully stocked.
  • Clear and reset tables according to service standards and reservation flow.
  • Coordinate closely with bartenders and service team to ensure timely beverage delivery.
  • Participate in daily briefings and operational updates.

Billing & Transactions

  • Prepare and present bills accurately and in a timely manner.
  • Handle guest transactions efficiently and professionally.
  • Ensure accuracy in all billing processes.

Team Support & Coordination

  • Assist bartenders, hostesses, and colleagues with operational requirements.
  • Support beverage service and basic drink preparation when required.
  • Communicate guest feedback or service concerns promptly.
  • Foster a collaborative and service-driven team environment.

Service Excellence & Brand Standards

  • Uphold Mandarin Oriental’s Pillars of Legendary Quality Experiences.
  • Maintain impeccable grooming, hygiene, and uniform standards.
  • Demonstrate strong product knowledge, attention to detail, and a guest-focused mindset.
  • Deliver service with warmth, sophistication, and a refined bar presence.

Pre-Opening Responsibilities

  • Participate in training programs, SOP briefings, and service simulations.
  • Assist in setting up bar and lounge areas, including service stations.
  • Support pre-opening operations as required.

 

Qualifications & Experience

  • Diploma in Hospitality or related field.
  • Previous experience in food and beverage service or bar/lounge operations is an advantage.
  • Basic knowledge of cocktails, beverages, and bar service practices preferred.
  • Strong communication and interpersonal skills.
  • Guest-focused with a positive and service-oriented attitude.
  • Ability to work effectively in a fast-paced environment.
  • Strong teamwork and coordination skills.
  • Professional grooming and presentation.
