As a Junior Sous Chef - Pastry in The Landmark Mandarin Oriental, Hong Kong, you will be responsible for
- Prepares and supervises daily mise-en-place and ensures that all sections are supplied with fresh and high quality products based on anticipated business levels
- Ensure that pastry preparation and cooking standards are maintained in all outlets and banquets
- Ensures orderly handling of all raw products and checks that quantities prepared are according to recipes and plate specifications
- Liaise with Chief Steward to maintain the high standards of cleanliness and to align with HACCP requirement
- Report any problems, failures of machines or equipment
- Perform duties set aside by the Pastry Chef or Executive Sous Chef
Requirements:
- With relevant working experience in a similar capacity in 2 or 3 Michelin-starred kitchen
- Strong interpersonal skills and exemplary leadership skills
- Excellent food & beverage and menu planning knowledge
- Good command of both spoken and written English
