MANDARIN ORIENTAL HOTEL GROUP

We are currently looking for a talented and highly driven Sous Chef  with passion of creating meMOrable dining experiences for guests.

Main Responsibilities: 

The Sous-Chef is responsible for assisting the Head Chef in managing the kitchen brigade in charge of banquets and off-site catering for up to 700 guests.
He/She must uphold quality, service, and product standards. Additionally, he/she replaces the Head Chef in their absence.

Below is a non-exhaustive list of tasks related to these responsibilities:

  • Monitor all orders placed and manage costs.
  • Check deliveries for quality, freshness, quantity, and cost.
  • Verify invoicing according to accounting procedures.
  • In the absence of the Head Chef, prepare daily schedules.
  • Prepare absence forms (accident, illness, vacation, holidays, other) and daily attendance sheets.
  • Organize and supervise the onboarding of new team members in line with procedures (mentoring, task introduction, knowledge checks).
  • Provide ongoing training for staff.

Job Requirements:

  • Minimum 5 years experience working in a luxury hotel environment. European experience is a must
  • Minimum 2 years experience in a similar position
  • Ability to communicate in proper English & French both verbally and in writing
  • Excellent overall communication skills
  • Able to multi-task
  • Training and coaching skills
  • The ideal candidate will have a genuine passion for culinary, lots of flair and creativity
  • You will have exceptional inter-personal, management and organizational skills
  • Must be of smart appearance with excellent personal hygiene standards
