About the job

Based at The Landmark Mandarin Oriental, Hong Kong within Kitchen – SOMM & IRD Department in Hong Kong, the Junior Sous Chef is responsible to assist the Chef de cuisine and Sous Chef in day to day running of the department and production of all food items. The Junior Sous Chef reports to the Chef de Cuisine.

As Junior Sous Chef, you will be responsible for the following duties:

  • Responsible for mise-en-place preparation and sample tasting for management

  • Ensure that preparation and cooking standards are maintained

  • Maintain proper quantity of par stock for mise-en-place and assist in food requisition as required

  • Liaise with Chief Steward to maintain the high standards of cleanliness and to align with HACCP requirement

  • Report any problems, failures of machines or equipment

  • Perform duties set aside by the Chef de Cuisine or Executive Sous Chef

As Junior Sous Chef, we expect from you: 

  • Solid experience in hotels or reputable restaurants

  • Pleasant, self-motivated, detail-orientated and able to work independently

  • Good food & beverage and menu planning knowledge

  • Good organising, communication and interpersonal skills

  • Good command of both spoken Chinese and English
