About the job

Based at the Mandarin Oriental, Shenzhen within the Food & Beverage Division in Shenzhen, The Executive Chef is responsible for leading and collaborating with the Food & Beverage management team and culinary colleagues to ensure the successful operation of specific dining outlets. This role drives excellence in culinary execution, guest and colleague satisfaction, and operational efficiency, while continuously enhancing service standards and maximizing financial performance across all areas of responsibility. Executive Chef reports to Director of Restaurants, Bars & Experiences , Operations.

As Executive Chef, you will be responsible for the following duties:

  • Oversee culinary operations for Bazaar Kitchen, Banquets, Lian Lounge, In-Room Dining and MO Bar.
  • Be responsible for menu development, concept execution, and culinary innovation
  • Co-operate with and drive forward the implementations of minimum operating standards in all RB&E kitchens through close follow-up with Outlet Managers
  • Foster a strong culture of learning and professional development by inspiring culinary colleagues to actively engage in training initiatives and continuous growth opportunities
  • Collaborate closely with the Learning & Development department to identify, develop, and address departmental training and development needs, ensuring the continuous enhancement of culinary skills, knowledge, and performance standards.

As Executive Chef, we expect from you: 

  • Extensive experience in luxury hospitality, preferably gained within internationally recognized hotel brands and fine dining establishments.
  • Deep understanding of local guest preferences, dining trends, and evolving market expectations
  • Capable of working effectively within a complex organizational structure, collaborating closely with multiple stakeholders
  • Dynamic and highly adaptable leader with strong cultural alignment and team engagement capabilities
  • A hands-on culinary leader who leads by example, maintains a strong presence in the kitchen, and works closely alongside the team
  • Good command of both spoken and written English
