As the Director of Food & Beverage at Mandarin Oriental, Marrakech, you will be responsible for leading and overseeing the entire F&B division—including restaurants, bars, in-room dining, events, and banqueting operations. You will ensure excellence in service delivery, enhance guest satisfaction, drive financial performance, and inspire a culture of creativity, consistency, and luxury in alignment with the Mandarin Oriental brand.

 

Key Responsibilities

  • Provide strategic direction and leadership to all F&B outlets and operations.
  • Ensure the highest standards of service, quality, hygiene, and safety are maintained across all dining experiences.
  • Work closely with the Executive Chef and Outlet Managers to design and implement innovative menus and dining concepts that reflect both local culture and Mandarin Oriental’s signature touches.
  • Drive revenue and profitability through effective cost control, upselling initiatives, and guest experience enhancements.
  • Lead, coach, and mentor a diverse team, promoting engagement, development, and excellence in performance.
  • Manage departmental budgets, forecasts, and P&L performance.
  • Oversee event planning and execution to ensure seamless experiences for meetings, weddings, and private functions.
  • Foster strong relationships with guests, colleagues, suppliers, and local partners to support business development.
  • Uphold and promote Mandarin Oriental’s Vision, Mission and Values at all times.

 

Requirements

  • A degree in Hospitality Management or related field is preferred.
  • Proven experience (minimum 5–8 years) in a senior F&B leadership role within luxury hospitality, preferably in a resort environment.
  • Strong business and financial acumen with a solid understanding of F&B cost control and profitability.
  • Creative flair and passion for delivering world-class culinary experiences.
  • Excellent leadership, organizational, and communication skills.
  • Culturally aware, with a deep understanding of international and local F&B trends.
  • Fluent in English and French.
