About the job

Based within the Kitchen in Guangzhou, the Chinese Brasserie Concept Head Chopper is responsible for assisting the Chinese Brasserie Concept Executive Chef in running the assigned kitchen efficiently. He/she is to ensure, that the agreed quality, hygiene and other standards are kept or surpassed at all times. The Chinese Brasserie Concept Head Chopper I reports to the Chinese Brasserie Concept Executive Chef.

 

As Chinese Brasserie Concept Head Chopper, you will responsible for the following duties:

  • Create daily requisitions and kitchens transfers with the given ordering systems.
  • Report all challenges and failures of machinery, tools or equipment’s and follow up.
  • Liaise and communicate with other Sous Chefs and Section leaders on any inter departmental requirements.
  • Attend all training sessions deemed suitable by the Department Head.
  • The Head Chopper I is assisting the Executive Chinese Chef with the production and quality control of all foods prepared in his/her respective area section.
  • Assist Executive Chinese Chef in all the menus implementation.
  • Conduct daily inspections throughout all assigned kitchen sections to observe operational standards relating to section responsible products and follow up with the Executive Chinese Chef.
  • Constantly strive to improve kitchen-operating procedures
  • Perform any other reasonable duties as required by the department head
  • Identify areas of improvement through suggestions.

 

As Chinese Brasserie Concept Head Chopper, we expect from you:

  • Result oriented; interpersonal skills.
  • Artistic flair, eye for details, taste and presentation.

  • Committed and career minded.
  • College degree/diploma or above from an accredited culinary institution.
  • At least 2 years working experience in 5 star hotel or high profile restaurant in similar capacity.

关于职位

该职位位于广州文华东方酒店厨房部,中式小馆概念头砧负责协助中式小馆概念行政总厨高效运营指定厨房,他/她必须时刻确保本部门产品质量,卫生状况及其他工作标准达到或超过酒店标准规定。中式小馆概念头砧向中式小馆概念行政总厨汇报。

 

作为中式小馆概念头砧,你将负责以下职责:

  • 起草并使用规定系统和程序, 执行采购及部门间转接原料及食品的操作。
  • 及时汇报并跟进设备用具的维护状况,及时报损及跟进维护和维修。
  • 与其他厨师长和部门主管及时沟通与联系以保持部门间工作协调一致。
  • 及时参加与本职位相关的培训。
  • 协助中餐行政总厨在其责任区域内完成所有食物准备工作及食物出品质量控制。
  • 协助中餐行政总厨落实执行菜单。
  • 每日检查并跟进本档口从加工到出品的各个环节以保证中餐行政总厨的各项要求得以贯彻执行。
  • 致力提高厨房生产加工工艺及流程。
  • 根据上级要求及工作需要调整工作职责范围。
  • 虚心接受改进建议。

  • 不少于两年的5星级酒店或高级餐厅同等职位的工作经验。
