Mandarin Oriental Sanya is looking for a Chef de Partie to join our Pavilion Kitchen team.

About the job

More than 4 years of kitchen work experience, excellent culinary skills, familiar with kitchen cooking processes, reasonable division of labour to effectively achieve work goals, strong sense of responsibility, understanding of food safety, disinfection, and refrigerator management.

As Chef de Partie you will be responsible for the following duties:

  • To supervise and organize employee health and good preparation before a meal and daily work and other posts vacant post, is responsible for the health form.
  • Supervise various areas: water, electricity, gas, open: customs inspection work.
  • Daily meat, vegetables cut into the side and curing work completion
  • Ensure the taste and quality of buffet dishes
  • Assist superiors in achieving daily work goals
  • Assist superiors in ensuring the production and quality of banquet team meals
  • Refrigerator management regional health standards in accordance with the process
  • Distributes the workload appropriately; lays out work in a well-planned and organised manner
  • Guide employees on operating procedures, standards, and skills
  • Check food ingredients and ensure the normal operation of the kitchen through raw material procurement

As Chef de Partie we expect from you: 

  • Familiar with the kitchen dining process, reasonable division of labor, and effective completion of work goals
  • Strong sense of responsibility, able to withstand pressure
  • Familiar with the standard process of kitchen operation
  • Ensure daily production standards and quality in the kitchen
