About the job

Based at the Mandarin Oriental New York, within the Culinary Department in New York City, the Banquet Sous Chef is responsible for the Banquet Culinary Team. Leading, teaching and correcting employees, under the guidance of the Executive Chef, continuously striving to exceed guest and client expectations. The Banquet Sous Chef reports to the Executive Chef.

As Banquet Sous Chef, you will be responsible for the following duties:

  • Plan and oversee the preparation, cooking and presentation of menus for all banquet events such as weddings, corporate meetings, and parties
  • Collaborate with clients, guests, event planners, etc to understand their specific food preferences and dietary requirements
  • Prepare in accordance with quality, availability, and seasonality, and ensure market lists are completed on a daily and weekly basis.
  • Supervise and coordinate activities of banquet tournants and other banquet kitchen staff, garde manger, and employee dining room colleagues. Organize food production in a cost effective and hygienic manner, weekly schedule generation for banquet kitchen colleagues, garde manger, and dining room colleagues, and assist in recruitment, training, coaching, and corrective actions as necessary to maintain luxury standards.
  • Controlling & being accountable to the effort in achieving both Food & Labor Cost Goal, control food cost by maintaining food standards at reasonable cost through liaison with the Purchasing Department to check prices, market price fluctuation, quality, etc. Lead training as it pertains to FLHSS

As Banquet Sous Chef, we expect from you:

  • Minimum of 5 years in the luxury hotel culinary, minimum of two years management experience in a high volume luxury banquet events
  • Experience in Union environment coaching union colleagues
  • Ability to work a flexible schedule include AM and PM, weekends, and all holidays

Salary and Benefits:

  •  Salary $120,000- $130,000 yearly plus banquet points.
  • A competitive benefits package, including health, dental and vision, 401(K), etc
