As a Junior Sous Chef - Pastry in The Landmark Mandarin Oriental, Hong Kong, you will be responsible for

  • Prepares and supervises daily mise-en-place and ensures that all sections are supplied with fresh and high quality products based on anticipated business levels
  • Ensure that pastry preparation and cooking standards are maintained in all outlets and banquets
  • Ensures orderly handling of all raw products and checks that quantities prepared are according to recipes and plate specifications
  • Liaise with Chief Steward to maintain the high standards of cleanliness and to align with HACCP requirement
  • Report any problems, failures of machines or equipment
  • Perform duties set aside by the Pastry Chef or Executive Sous Chef

Requirements:

  • With relevant working experience in a similar capacity in 2 or 3 Michelin-starred kitchen
  • Strong interpersonal skills and exemplary leadership skills
  • Excellent food & beverage and menu planning knowledge
  • Good command of both spoken and written English
