Scope of Position:

The Hygiene Officer is responsible for the overall hotel sanitation and Hygiene standards. He/She will be responsible for the implementation of HACCP and Health & Safety guidelines related to Food & Beverage from MOHG (Mandarin Oriental Hotel Group) as well as local codes.

Duties & Responsibilities:

  • Conducts daily spot checking of designated areas, photographing as objective evidence where and if necessary.
  • Attends kitchen briefing and highlighting repeated violations and outstanding issues.
  • Verifies relevant documents during spot checking.
  • Conducts at least 1 internal audit per day.
  • Ensures that meetings are followed by the individuals concerned.
  • Carries out other duties as and when requested by management.
  • Inspects S&S files monthly to ensure proper procedures and updates are in place.
  • Implements HACCP with certification, following up on training for the F&B team.
  • Oversees special projects and assignments as assigned by the Executive Chef and/or the Director of Food & Beverages
  • Keeps track of the submission of corrective action for internal audits and kitchen walkthrough reports.
  • Organizes food sampling and follows up for original certificate and payment etc.
  • Updates tracking sheet for SFSMS/BFH/ESFT & refresher courses.
  • Gathers relevant information and records for any alleged food borne illness.
  • Ensures that the internal audit for the month is completed.
  • Verifies the records of reported sickness of food handlers and status of their health checkup.
  • Verifies all stewarding files.
  • Conducts HACCP meetings.
  • Conducts HACCP briefings during orientation.
  • Performs any other reasonable duties as required by the department head from time to time.
  • Attends all training sessions arranged by MO (Mandarin Oriental).

Qualifications / Experience:

  • EU passport is mandatory in order to work in Greece.
  • Minimum of 1 years’ experience in a similar position.
  • Has a minimum of 1-2 years’ experience as a Hygiene Officer.
  • Reading, writing and oral proficiency in English and Greek.
  • Advanced knowledge of Microsoft Office suite (Excel, Word).
