As a Food & Beverage Revenue Analyst Manager in Mandarin Oriental, Hong Kong , you will be responsible for overseeing the revenue optimization and financial performance of the Food and Beverage departments in two hotels (i.e. Mandarin Oriental Hong Kong and The Landmark Mandarin Oriental, as well as their restaurants, online shops, cake shop, and banqueting operations. As the F&B Revenue Analyst Manager, you will play a crucial role in formulating commercial strategies, maximizing revenue and driving the profitability of our diverse F&B offerings across both properties. Your analytical skills, financial expertise, and strategic thinking will contribute to the overall success of our F&B operations.
Responsibilities:
Revenue Analysis and Reporting:
Analyse F&B revenue performance for each bar, restaurant, online shop, cake shop, and banqueting operation within the two hotels, identifying trends, challenges, and opportunities
Monitor key performance indicators such as average check, covers, occupancy, online sales, optimizing bar/ restaurant seating and banquet bookings, providing comprehensive reports to the management team
Conduct regular competitor analysis to benchmark our performance in the market and identify strategies to increase revenue across all F&B outlets
Pricing and Menu Optimization:
Collaborate with the F&B teams, restaurant managers, and online shop managers to develop pricing strategies that maximize revenue and profitability while ensuring guest satisfaction
Analyse food and beverage menu and menu item performance for each bar, restaurant, and the cake shop, making recommendations for menu engineering, item pricing, and menu design improvements to drive revenue growth
Work closely with the chefs, pastry chefs, restaurant managers, cake shop manager, assistant & Director of F&B to develop seasonal menus, promotions, and product offerings that drive customer engagement and revenue growth
Provide insights and recommendations on pricing and offerings for banqueting events to optimize revenue potential
Forecasting and Budgeting:
Assist in the development of annual and monthly F&B revenue budgets and forecasts for both hotels, utilizing historical data, market trends, and anticipated demand
Collaborate with the Sales & Marketing teams to incorporate market insights and demand forecasts into revenue projections
Monitor actual performance against budgets, providing variance analysis, highlighting key drivers, and proposing corrective actions when necessary
Revenue Management Strategies:
Collaborate with the Revenue Management teams of both hotels to align F&B revenue strategies with the overall hotel revenue management strategies
Work closely with the Sales & Marketing teams of both properties to identify opportunities for cross-promotion, package offerings and new channels to drive F&B revenue
Provide insights and recommendations on pricing, promotions, and packaging for both hotels to optimize revenue and drive profitability
Coordinate closely with online channel distributors to maintain and manage the division’s ongoing digital commercial strategy
Identify and advise on driving opportunities for bulk orders and voucher sales in collaboration with the Sales & Marketing teams
Cross-Functional Collaboration:
Work closely with the F&B teams of both hotels, including the Directors of F&B, Executive Chefs, and Restaurant Managers, to develop and implement revenue-enhancing initiatives
Collaborate with the Sales & Marketing teams to develop targeted marketing campaigns and promotions for both properties to drive F&B revenue
Collaborate with the Finance departments to ensure accurate and timely financial reporting and reconciliation of F&B revenue for both hotels
Requirements:
Bachelor's degree in Hospitality Management, Business Administration, Finance, or a related field. A master's degree is a plus
Proven experience in a similar revenue management, financial analysis, or related role within the hospitality industry, preferably with experience overseeing multiple F&B outlets
Strong analytical skills with the ability to interpret financial data, identify trends, and make data-driven decisions
Proficient in revenue management systems and tools, as well as Microsoft Excel and other data analysis software
Excellent communication and presentation skills to effectively convey complex financial concepts to stakeholders
Detail-oriented, with strong organizational and time management skills to handle multiple projects and meet deadlines
Knowledge of the local F&B market and industry trends is advantageous
Ability to work collaboratively in a cross-functional team environment
Written and spoken fluency in both Mandarin and Cantonese languages is preferred
