About The Role
As The Lounge/IRD Manager at Mandarin Oriental Conservatorium, you will be responsible for the overall leadership, daily operation and performance of the outlets. Reporting to the Food and Beverage Operations Manager, you will ensure the delivery of exceptional guest experiences, drive financial performance, and lead a high-performing team aligned with Mandarin Oriental standards and values.
Key Responsibilities
• Lead, inspire and manage The Lounge and IRD teams to deliver intuitive, refined and personalised service.
• Oversee daily operations, ensuring smooth service flow and operational efficiency at all times.
• Maintain the highest standards of food, beverage and service quality in line with Mandarin Oriental expectations.
• Manage staffing levels, scheduling and productivity to meet operational needs and financial targets.
• Drive revenue, profitability and cost control, including labour management and inventory control.
• Ensure full compliance with health, safety, hygiene and food safety regulations.
• Handle guest feedback professionally, resolving issues promptly while exceeding expectations.
• Collaborate closely with kitchen and support teams to ensure seamless guest experiences.
• Lead training, coaching and development initiatives, fostering engagement and building a strong talent pipeline.
• Conduct regular team briefings, performance reviews and feedback sessions.
• Support strategic initiatives, promotions, special events and brand-driven experiences.
• Act as a role model for Mandarin Oriental’s culture, values and luxury service philosophy.
What We Expect From You
• Minimum 2 years of experience as Restaurant Manager in a luxury hotel or high-end standalone restaurant.
• Proven leadership skills with the ability to motivate, coach and develop diverse teams.
• Strong operational knowledge of food and beverage service.
• Solid financial acumen, including budgeting, cost control and revenue management.
• Exceptional guest-centric mindset with excellent problem-solving abilities.
• Excellent communication and interpersonal skills.
• Excellent knowledge of English language (written and spoken); Dutch is a plus.
• Strong organisational skills and attention to detail.
• Flexibility to work evenings, weekends and public holidays.
