Responsible for all aspects of managing cleanliness, hygienic and safe environment of the back of house of food and beverage area. Ensuring the quality of the cleanliness, hygiene and sanitation in accordance’s to local UAE rules and regulation in addition to Mandarin Oriental Hotel Group standard.
Responsibilities
To perform and execute back of house cleaning and sanitation duties and ensuring the highest standards of cleaning, hygiene and sanitation at all times.
Can communicate international language (English).
To perform duties as assigned by the stewarding Supervisor, Assistant or the Back of House Manager.
To perform general cleaning duties as assigned by the Supervisor in accordance established standards of performance and schedules.
Keep the section clean and tidy.
To clean, wash, polish dishes and other operating equipment in any food and beverage outlet according to the established hygiene and sanitation standards.
HACCP system to follow up.
To count, sort and prepare operating for in-house water bottling.
Assist the Back of House Assistant Manager to carry out daily check/walk-throughs with the respective Head Chef and Outlet Manager to ensure in-house water bottling preparation area, all kitchens and show kitchens are kept in excellent condition.
Support F&B team and Culinary team with any additional last minutes’ requirements for any operating equipment.
Attend and participate in all other meetings required by the Assistant or the Back of House Manager.
Perform any other reasonable duties as required by the Back of House Assistant Manager or Back of House Manager from time to time.
To be receptive to hotel training and initiatives.
