About the job
Based at the Mandarin Oriental, Tokyo, within the F&B division, the dynamic and experienced Restaurant Manager is responsible to oversee the daily operations of K'Shiki and Pizza Bar, two distinct and popular dining establishments within Mandarin Oriental Tokyo. This role requires a leader with a passion for exceptional guest service, operational excellence, and a proven ability to manage and motivate a high-performing team.
As Restaurant Manager, you will be responsible for the following duties:
* Manage all aspects of daily restaurant operations for K'Shiki and Pizza Bar, including staffing, service delivery, guest satisfaction, and financial performance.
* Develop and implement operational procedures and standards to ensure consistent quality and efficiency.
* Recruit, train, mentor, and evaluate a diverse team of service professionals, fostering a positive and productive work environment.
* Monitor and manage inventory, ordering, and cost control for food, beverages, and supplies.
* Collaborate with the culinary team to ensure menu quality, presentation, and guest satisfaction.
* Handle guest feedback and complaints professionally and efficiently, ensuring timely resolution and guest recovery.
* Ensure compliance with all health, safety, and hygiene regulations.
* Develop and execute promotional activities and marketing initiatives to drive business.
* Prepare and analyze financial reports, including P&L statements, and implement strategies to achieve revenue and profit targets.
* Maintain a strong understanding of industry trends, competitor activities, and guest preferences.
* Represent Mandarin Oriental Tokyo's brand values and deliver an unparalleled dining experience.
As Restaurant Manager, we expect from you:
* Minimum of 3-5 years of experience in a management role within a luxury hotel or fine dining restaurant environment, with a strong emphasis on Italian cuisine preferred.
* Proven track record of successful restaurant operations, including P&L management, staff development, and guest satisfaction.
* Excellent leadership, communication, and interpersonal skills.
* Strong organizational and problem-solving abilities.
* Ability to work under pressure in a fast-paced environment.
* Proficiency in English and Japanese (both written and spoken) is essential.
* Bachelor's degree in Hospitality Management or a related field preferred.
* Knowledge of POS systems, inventory management software, and Microsoft Office Suite.
* Flexibility to work evenings, weekends, and holidays as required.
