About the Job

Based at Mandarin Oriental Jakarta, the Pastry Intern will support the hotel’s Pastry team in creating exquisite desserts and baked goods that delight guests. This role ensures that pastry preparation, presentation, and hygiene meet the highest standards of quality and creativity. The intern reports to the Pastry Chef and works closely with the Culinary team.

As Pastry Intern, you will be responsible for the following duties:

Pastry Preparation Support

• Assist chefs in preparing doughs, batters, fillings, cakes, pralines, and decorations.
• Support plating and presentation of desserts to ensure consistency with MO standards.
• Help maintain cleanliness and organization in pastry workstations.

Operations & Hygiene

• Ensure compliance with food safety and hygiene standards.
• Assist in monitoring pastry equipment and reporting maintenance needs.
• Support daily pastry operations including mise en place and stock rotation.

Administration

• Record and update pastry production sheets and checklists.
• Assist in maintaining inventory of pastry ingredients and supplies.
• Support scheduling and documentation for pastry trainees.

Event & Special Projects

• Assist in preparing dessert menus and logistics for banquets, VIP events, or special functions.

Additional Responsibilities

• Perform other tasks as required to support the Pastry department.

What We Expect from You

• Currently pursuing or recently completed a degree in Culinary Arts, Hospitality Management, or related field.
• Strong interest in pastry arts and guest dining experiences.
• Good command of English and strong organizational skills.
• Passionate, detail-oriented, reliable, and able to work collaboratively in a fast-paced environment.
