The Junior Sous Chef - Pastry will assume full responsibility of all related operational and administrative aspects in the designated outlet.
Key Responsibilities:
It is part of your role to understand and disseminate/communicate all corporate and hotel policies and standard operating procedures to the colleagues.

Update and maintain a complete Training Matrix for your department.
You shall take all reasonable steps to safeguard stored information, and not divulge or otherwise transfer any personal data concerning the guests, customers or colleagues, or any confidential information concerning the hotel unless with the appropriate authority.
Use of the hotel’s network, computers or internet access which is in the hotel’s view unreasonable or inappropriate, for example gambling, chatroom, or pornographic material, is a serious breach of hotel policy and grounds for summary dismissal.

Oversee all operational culinary aspects of the Designated outlet cuisine and other related outlets.
Work closely with the Pastry Chef to create dishes and suggesting dishes in promotional events.
Ensure plating guides are up to date and distributed appropriately.
Encourage proactive, efficient and effective inter-departmental communication within and beyond the Food and Beverage division in order to promote a climate of teamwork and enthusiasm.
Responsible for the ordering and requesting of the ingredients on a daily basis.
Provide leadership, direction and support to all colleagues at any time.
Support the Pastry Chef to prepare a weekly roster.
Qualifications and Requirements:
5-7 years’ experience in the culinary industry.
Experience of the Middle East market preferred.
Able to create a variety of chocolate confections, such as chocolate truffles, bonbons, chocolate bars, chocolate-covered fruit, and more.
Strong Background about plated desert, banquet operation.
Able to create high tea, cake shop and display items.
Managing inventory and keeping control of stock
Assist with the ordering of stock and checking the quality and quantity on receipt
Strong experience with customized cake and showpiece.
