The Role
The Hygiene Manager will play a critical role in ensuring the highest standards of cleanliness, sanitation, and food safety across all areas of Mandarin Oriental Makati. As part of the pre-opening team, this position will establish and implement hygiene protocols, train staff, and oversee compliance with local and international health regulations to support the hotel’s commitment to excellence and guest well-being.

Key Responsibilities

Policy Development & Implementation
• Establish hygiene and sanitation policies for all hotel departments, with a focus on Food & Beverage and Culinary operations.
• Ensure compliance with local health regulations, HACCP standards, and Mandarin Oriental Hotel Group guidelines.

Monitoring & Auditing
• Conduct regular inspections of kitchens, restaurants, bars, storage areas, and guest facilities.
• Maintain detailed records of hygiene audits, corrective actions, and follow-ups.

Training & Awareness
• Develop and deliver training programs for staff on hygiene practices, food safety, and personal sanitation.
• Promote a culture of hygiene awareness across all departments.

Pre-Opening Preparation
• Collaborate with the Culinary and Engineering teams to ensure facilities, equipment, and processes meet hygiene standards before opening.
• Assist in vendor selection and evaluation to ensure suppliers adhere to food safety requirements.

Crisis & Risk Management
• Lead response protocols for food safety incidents, contamination risks, or outbreaks.
• Provide expert guidance during audits and inspections by external authorities.


Qualifications & Experience
• Bachelor’s degree in Food Science, Microbiology, Hotel Management, or related field.
• Minimum 5 years of experience in hygiene management within luxury hotels or international F&B operations.
• Strong knowledge of HACCP, ISO standards, and local health regulations.
• Excellent communication and training skills.
• Detail-oriented, proactive, and able to work effectively in a pre-opening environment.
