About the job

Based at the Mandarin Oriental Mayfair within the Culinary Department in London, the Head Pastry Chef will play an integral part in facilitating an experience like London has never known. By working through Chef Akira Back’s world famous dishes and operational strategy, you will be leading the best-known outlet kitchen brigade.

As Head Pastry Chef you will responsible for the following duties:

  • Executing Akira Back’s standardized dishes according to the recipes and user guide.
  • Overseeing all kitchen activity for pastry offering, Akira Back Restaurant, In-Room Dining, ABar Lounge, Abar Rooftop and Dosa.
  •  
  • Be responsible for weekly kitchen schedule, reviewing manpower level in accordance of projected business demand.
  • Delegating properly and managing the team efficiently in a high volume atmosphere catering to a high profile clientele. 

 

As Head Pastry Chef, we expect from you: 

  • Responsible in development and maintenance of all policies, procedures, and quality standard within the department, utilizing a continuous improvement approach to ensure a high quality, cost effective and customer focused operation.
  • Adhere to all legal requirements, regulations, and guidelines.
  • Adhere to all environment policies and programs as required.
