The Role

The Head Houseman oversees the daily activities of the Houseman team, ensuring the cleanliness, organization, and operational readiness of the outlet. This role supports seamless service delivery by coordinating resources, supervising team performance, and maintaining the highest standards in line with Mandarin Oriental’s Legendary Quality Experiences (LQE). The Head Houseman plays a key role in supporting operational efficiency and enhancing the overall guest dining experience.

 

Key Responsibilities

Operational Excellence

• Supervise and coordinate the daily activities of Housemen to ensure efficiency and consistency in operations.
• Ensure all dining areas, service stations, and back-of-house areas are clean, organized, and fully prepared for service.
• Oversee the setup and breakdown of the outlet, ensuring readiness before service and proper closing procedures.
• Monitor and ensure timely clearing, resetting, and preparation of tables in accordance with service standards.
• Ensure all operating equipment (chinaware, glassware, cutlery, linens) is clean, polished, and readily available.
• Maintain proper stock levels of service equipment and supplies, coordinating closely with Stewarding.
• Support the service team by ensuring smooth flow of operations during peak service periods.
• Monitor the condition of equipment and report damages, shortages, or maintenance requirements.
• Ensure proper handling, storage, and care of all equipment to minimize losses and breakages.

Service Excellence

• Support the delivery of exceptional guest experiences by ensuring the outlet environment is always clean, organized, and inviting.
• Anticipate operational needs and proactively assist service colleagues during busy service periods.
• Ensure prompt response to requests from the service team to maintain seamless operations.
• Uphold Mandarin Oriental grooming and presentation standards within the team.

Health, Safety, and Compliance

• Ensure strict adherence to health, hygiene, and sanitation standards across all areas of responsibility.
• Promote safe working practices and ensure proper use of equipment and cleaning materials.
• Monitor compliance with fire, life, and safety procedures and report any concerns immediately.

People & Culture

• Lead, guide, and support the Houseman team, ensuring clear task delegation and accountability.
• Assist in training, coaching, and developing team members to improve performance and efficiency.
• Ensure team members maintain proper grooming, punctuality, and professionalism.
• Foster a positive, collaborative, and team-oriented working environment.
• Participate in recruitment and onboarding of new Houseman colleagues as required.

Administrative Responsibilities

• Assist in monitoring inventory levels of operating equipment and supplies.
• Maintain records of equipment usage, losses, and replenishment needs.
• Support supervisors in preparing duty schedules and task assignments.
• Attend daily briefings and communicate relevant updates to the team.

 

Qualifications & Experience

• High School Diploma or equivalent preferred.
• Minimum of 1–2 years’ experience in a Food & Beverage support or stewarding role, with some supervisory exposure preferred.
• Strong understanding of restaurant operations and service flow.
• Good leadership, communication, and organizational skills.
• Ability to work in a fast-paced environment with attention to detail.
• Physically fit and capable of handling manual tasks and lifting equipment.
• Professional grooming and presentation aligned with luxury hospitality standards.
• Flexible with working hours, including evenings, weekends, and public holidays.
