To ensure that the hotel’s halal kitchens are in compliance to JAKIM’s requirements for halal assurance & certification, and to ensure that the halal certification is valid at all times.
Ensure that Materials Management complies with food safety requirements as stipulated by MOHG’s Safe & Sound practices (FLHSSE) and ISO 22000, in particular:
Supplier Audits of Food & Beverage vendors
Food safety practices as required by policies in above mentioned disciplines
Assist, when necessary, in all purchasing, receiving, store & inventory functions in accordance to hotel policies.
Develop, plan, organize, schedule, oversee and co-ordinate all halal related programs or activities and day-to-day programmes’ operation.
Manages the halal assurance and certification requirements to ensure validity of hotel’s halal certificate.
Ensures that the hotel complies with the Guidelines for Halal Assurance Management System as implemented by Department of Islamic Development Malaysia.
To ensure that the hotel’s halal policies and procedures are relevant to the guidelines mentioned and updating them whenever required.
To update the management and Halal Committee on the latest changes pertaining to Guidelines for Halal Assurance Management System as implemented by Department of Islamic Development Malaysia and / or Halal Malaysia Standard 1500:2009.
To approve the purchase of food and beverage items for halal kitchens, whether new or for replacement of current ingredients.
To constantly review all halal product purchases conducted by the hotel.
To ensure that the halal certificate/process files are updated with valid certificates and product specifications.
Responsible to ensure that the products purchased and received into the chef food store, commissary and commissary freezers and chillers are halal products.
Ensures that all issuance of halal items follow a schedule that ensures no contamination.
Conduct regular or minimum monthly halal inspections of the halal kitchens, halal holding areas as mentioned above.
Initiate halal internal audits with the Halal Committee at least a minimum of twice a year.
Report non-conformances, especially those from inspections and internal audit in a formal report and ensures that they are looked into for closure within a timely manner.
Work closely with the Food Safety Manager to ensure that halal products, stores and kitchens comply with food safety requirements.
Liaise with the Executive Chef on new menu items for the halal kitchens, as well as work closely with the Sous Chefs from halal kitchens.
Call for Halal Committee meeting, minimum twice a year to update the committee on the issues related to halal assurance and compliance.
Liaise with the Director/ Manager of Business Management System when:
communication with JAKIM is required
requesting for approval of new halal items
requesting for approval of promotional menu items
the halal recertification needs to be renewed (6 months before expiration date)
updating of ingredients and menu items will be required in the HALAL hub
Liaise with JAKIM auditors, follow up and finalize the audit process.
Plan and conduct periodic training on halal requirements for the hotel’s colleagues.
Job Requirement
Possess at least Diploma/ Bachelor's Degree in Food Science/ Food Technology/ Nutrition or equivalent
Preferably candidate with 1-3 years of working experience in the related field
ISO 9001, 14001 and OHSAS 18001 knowledge is an advantage
Knowledge of HACCP practices are an advantage
Exposed to HALAL, HACCP and ISO practices
Ability in handling documents related to HALAL
Ability to prepare HALAL SOP
Ability to ascertain compliances of all processes and procedures with food safety
Fluent in computer software programmes used by the department
Able to liaise with JAKIM Officers
Knowledge in submitting/ updating of ingredients and menu items through HALA hub
Maintenance of good interpersonal relationship with all levels of colleagues in the department and in the hotel
Able to take the initiative where necessary
Able to trouble shoot general IT related issues
Possesses organizational and inter-personal skills
Self-motivated and self-starter
Able to conduct internal training if required
Self-driven, dynamic, open minded and eager to learn new things
An independent problem solver and able to work effectively under pressure
