About the job
Based at Mandarin Oriental Punta Negra, Mallorca, as the Executive Pastry Chef, you will be responsible for overseeing all day-to-day operations of the pastry and bakery section of the kitchen, Create and Bake a wide range of products such a cakes, cookies, pies and bread following traditional and modern recipes.
As Executive Pastry Chef, you will be responsible for the following duties:
Develop new recipes, innovate and develop new and exciting deserts to enhance the hotel´s menu and engage customers
Lead the administrative management of the pastry team, including effective scheduling, budget control, and compliance with operational standards.
Decorating pastries using different icings, toppings... to ensure beautiful and appealing presentations.
Inventory management, monitor and order ingredients and supplies needed for the pastry section.
Health and safety compliance, ensure the pastry section adheres to health and safety regulations.
Collaboration, work closely with the Executive Chef and other Kitchen staff to ensure the quality of the products.
As Executive Pastry Chef, we expect from you:
Experience and education
Culinary School / University Degree, with at least 2-3 years' experience as an Executive Pastry Sous Chef, ideally in Luxury Hospitality
Technical Skills
Baking techniques, mastering the fundamentals of baking.
Flavor combination, knowing how to balance and combine flavors to create delicious and innovative pastries.
Patisserie Expertise, specialising in making a variety of pastries, desserts, breads and others baked goods.
Chocolate Sculpting and Sugar Artistry, crafting intricate designs using chocolate and sugar.
Food Safety (HACCP), maintaining and clean sanitary work environment and adhering to food safety standards.
Menu Development, collaborating with other chefs to develop and update the menu.
Plate desserts, designing and presenting desserts in an aesthetically pleasing manner.
Creation of desserts in collaboration with the Executive Chef.
