About the job

Based at the Mandarin Oriental Conservatorium, Amsterdam, within the Culinary department, the Executive Pastry Chef is responsible for leading the pastry kitchen, overseeing the creation of desserts, pastries, and baked goods. Ensure the highest standards of quality, creativity, and presentation, while managing the pastry team and inventory. The Executive Pastry Chef reports to the Director of Kitchen Operations. 

As an Executive Pastry Chef, you will be responsible for the following duties:

  • Lead and manage all pastry and bakery operations, ensuring consistent quality and presentation.
  • Design and execute innovative dessert menus aligned with the restaurant’s concept and seasonal availability.
  • Supervise, train, and mentor pastry colleagues, fostering skill development and teamwork.
  • Maintain high standards of food safety, sanitation, and compliance with health regulations.
  • Oversee inventory control, ordering, and cost management to meet budget goals.
  • Ensure efficient production schedules and timely execution of all pastry items.
  • Supporting the team thanks to trainings and regular feedback in order to improve the employee performance and compliance with the brand standards and local, regional and national legal safety regulations.
  • Leading the daily Mise en Place.

As an Executive Pastry Chef, we expect from you:

  • Minimum of 5 years of professional pastry experience, including leadership roles.                                                                 
  • Lead all pastry and bakery operations with excellence and consistency.
  • Background in high-end restaurants, luxury hotels, or large-scale pastry operations preferred.
    Demonstrated ability to lead, train, and motivate a pastry team
  • Uphold the highest standards of food safety, hygiene, and organization.
  • Strong written and verbal communication skills in English;
