Mandarin Oriental Jakarta is looking for a Executive Chef to join our Kitchen team.

About the job

Based Mandarin Oriental Jakarta, the Executive Chef is responsible for leading the culinary direction, innovation, and performance of all Restaurants, Bars & Experiences. This includes overseeing kitchen operations, ensuring consistency in quality and presentation, driving financial performance, and developing high-performing culinary teams. The Executive Chef reports to the Director of Restaurants, Bars & Experiences.
 

As Executive Chef, you will be responsible for the following duties:

1. Culinary Strategy & Innovation

  • Develop and execute the culinary vision aligned with RB&E strategy and brand standards.
  • Lead concept development, menu engineering, and seasonal promotions.
  • Ensure all culinary offerings remain relevant, innovative, and competitive.
  • Collaborate with Marketing and RB&E leadership on dining experiences and activations.

2. Operational Excellence

  • Oversee all kitchen operations across restaurants, bars, banquets, and in-room dining.
  • Ensure compliance with hygiene, HACCP, and food safety standards.
  • Standardize recipes, portioning, and presentation across all outlets.
  • Conduct regular quality audits and implement corrective actions.

3. Financial Management

  • Manage food cost, wastage, and labor efficiency in line with budget targets.
  • Drive profitability through menu engineering and cost optimization.
  • Analyze P&L performance and implement improvements.
  • Work closely with Procurement on sourcing strategies and supplier management.

4. Leadership & Talent Development

  • Lead, coach, and inspire all kitchen teams to achieve high performance.
  • Develop succession planning and structured training programs.
  • Foster a culture of accountability, creativity, and continuous improvement.
  • Ensure effective workforce planning and productivity.

5. Guest Experience & Brand Alignment

  • Ensure culinary offerings enhance the overall guest journey and brand storytelling.
  • Maintain consistent standards across diverse dining concepts.
  • Engage with guests and VIPs to strengthen relationships and gather feedback.
  • Continuously drive improvements based on guest insights.

6. Collaboration & Business Partnership

  • Partner with RB&E, Operations, Finance, and Marketing teams to deliver business results.
  • Support new openings, refurbishments, and concept rollouts.
  • Participate in strategic planning and leadership discussions.
  • Act as a brand ambassador for culinary excellence internally and externally.

7. Additional Responsibilities

Perform other duties as assigned in line with operational needs.

As Executive Chef, we expect from you:

Educational Background 

  • Degree or diploma in Culinary Arts or related field preferred.

Experience 

  • Minimum 8–10 years of experience in senior culinary leadership roles.
  • Proven experience as Executive Chef or Cluster Chef in luxury or multi-outlet operations.
  • Strong track record in concept development and multi-venue management.

Skills & Competencies

Technical Proficiency 

  • Proficient in Microsoft Office applications
