Based at The Sirēya Desaru Coast within the Food & Beverage Department in Bandar Penawar, The Director of Food & Beverage is responsible for shaping and nurturing a workplace culture that attracts, inspires, and supports colleagues at every stage of their journey. This role focuses on developing a positive, inclusive, and high-performing environment that reflects the values and vision of the resort. The Director of Food & Beverage reports to the General Manager.

As Director of Food & Beverage, you will responsible for the following duties:

  • Lead the strategic direction of all Food & Beverage operations, ensuring alignment with the resort’s vision, brand identity, and guest expectations.
  • Oversee the daily performance of all F&B outlets, including restaurants, bars, lounges, room service, and banqueting, guaranteeing smooth, efficient, and high-quality service.
  • Ensure financial excellence through effective budgeting, cost control, revenue optimization, and P&L management across the department.
  • Drive exceptional guest experiences by upholding luxury service standards, monitoring feedback, and implementing continuous service improvements.
  • Collaborate on concept and menu development with culinary and beverage leaders to deliver innovative, high-quality, and guest-centric offerings.
  • Lead, coach, and develop the F&B leadership team, fostering a culture of accountability, collaboration, and colleague engagement.
  • Ensure full compliance with all hygiene, safety, and health regulations (HACCP & FSMS), as well as internal brand and operational standards.
  • Work closely with other departments (Rooms, Events, Sales, Marketing, etc.) to ensure coordinated service and successful resort-wide initiatives.
  • Create and implement promotional strategies to support business goals, including seasonal offers, signature experiences, and special events.
  • Champion sustainability and innovation by integrating environmentally responsible practices and staying ahead of global F&B trends.

As Director of Food & Beverage we expect from you: 

  • Extensive experience in F&B leadership roles within luxury hotel or resort environments
  • Proven track record in team management, budget control, and service innovation
  • Strong commercial and strategic thinking with a focus on guest experience
  • Excellent communication, interpersonal, and leadership skills
  • Deep understanding of global F&B trends and premium service standards
  • Ability to work under pressure and adapt to a fast-paced, guest-centric environment
  • Fluency in English; additional languages are a plus
  • Hospitality degree or equivalent professional qualification preferred
