About the job

Based at Mandarin Oriental, Doha within the Culinary Department in Doha, the Commis 1 – Pastry is responsible for supporting the daily operations of the pastry kitchen with a focus on high-quality preparation, consistency, and presentation. The role involves assisting in the production of desserts, pastries, and baked goods according to hotel standards, under the supervision of the Pastry Chef and Executive Pastry Chef. This position requires attention to detail, a commitment to hygiene and safety, and the ability to work collaboratively in a dynamic kitchen environment. The role also includes flexibility to support pastry production, banquets, amenities, gelato kitchen, and QAQAW kitchen based on business needs and shift schedules.

As Commis 1 – Pastry, you will be responsible for the following duties:

  • Prepare and produce basic pastries, desserts, and baked goods in accordance with recipe standards.
  • Follow mise en place procedures including measuring, mixing, and portioning ingredients.
  • Maintain cleanliness and order in the pastry section and adhere to hygiene and HACCP regulations.
  • Assist in decorating and assembling cakes, tarts, and plated desserts with attention to presentation.
  • Support the team during high-volume service periods and buffet set-ups.
  • Communicate effectively with senior pastry team members to ensure smooth kitchen operations.
  • Properly label, store, and rotate ingredients and finished products.
  • Participate in training sessions to continuously improve pastry techniques and kitchen knowledge.
  • Report equipment issues and food quality concerns to the Pastry Chef promptly.
  • Uphold Mandarin Oriental’s grooming, uniform, and professional conduct standards

As Commis 1 – pastry, we expect from you:

  • High School qualification or equivalent required.
  • Degree or Diploma in Culinary Arts or Pastry is preferred.
  • Minimum 1 year of experience in a hotel Pastry or high-volume Pastry production is preferred.
  • Knowledge of Pastry production methods.
  • Ability to work in a hot environment and handle physical demands (e.g. lifting up to 15 kg).
  • Strong organizational and time management skills.
  • Basic understanding of food hygiene and safety principles.
  • Proficiency in English; knowledge of Arabic or other languages is an advantage.
  • Ability to follow instructions, work under pressure, and remain focused during busy service hours.
  • Demonstrates teamwork, responsibility, and commitment to quality.
