About the job

Based at the Mandarin Oriental Downtown, Dubai within the Pastry section in Dubai, the Commis will assist in the preparation and presentation of high-quality pastries, ensuring consistency, precision, and attention to detail. This role supports timely production while maintaining exceptional standards of hygiene, quality, and presentation in line with the hotel’s culinary excellence. The Commis reports to Chef de Partie.

As a Commis, you will be responsible for the following duties:

• Assist in the preparation of a wide variety of pastries, breads, and other baked goods, ensuring adherence to established recipes and presentation standards.
• Maintain consistency, quality, and portion control in all pastry production to meet luxury brand expectations.
• Support the Pastry Chef and Demi Chef de Partie in daily operations, including mise en place, station setup, and timely execution during service periods.
• Ensure proper storage and labelling of all ingredients and finished products to maintain freshness and comply with food safety standards.
• Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.

As a Commis, we expect from you: 

• High School qualification or equivalent is required.
•  A Degree or Higher National Diploma in Hospitality or Culinary Arts is preferred.
• Minimum of 1 year of culinary experience as a Commis -Pastry in a high-volume hotel or restaurant is preferred.
• Basic skills in food handling, preparation, and kitchen operations.
• Familiarity with basic food hygiene and safety standards is an advantage.
• Passion for bakery and willingness to learn and grow within the culinary team.
