The Role 

The Chinese Restaurant Server is responsible for delivering attentive, efficient, and personalized food and beverage service, ensuring an exceptional dining experience within a Chinese specialty restaurant setting. This role manages station operations, order taking, and billing with accuracy and professionalism, reflecting Mandarin Oriental’s commitment to legendary service.

 

Key Responsibilities

Guest Dining Experience

  • Greet guests warmly, present menus, and provide knowledgeable recommendations on Chinese dishes, specialties, and tea pairings.
  • Take orders accurately, considering sharing-style dining and guest preferences.
  • Serve food and beverages in accordance with established service standards, including proper presentation and timing of dishes.
  • Assist with portioning or plating when required (e.g., family-style or banquet service).
  • Monitor guest satisfaction and respond promptly to requests or concerns.
  • Engage guests confidently, enhancing the authenticity .of the Chinese dining experience.
  • Bid farewell to guests and encourage repeat visits

Station Management & Service Flow

  • Maintain mise en place, ensuring readiness of service stations including condiments, tea sets, and utensils.
  • Coordinate closely with kitchen teams to ensure proper sequence and timing of dish service.
  • Ensure tables are cleared and reset efficiently in accordance with service flow and reservation plans.
  • Participate in daily briefings and operational updates.
  • Maintain cleanliness and organization of assigned areas at all times.

Billing & Transactions

  • Prepare and present bills accurately and in a timely manner.
  • Handle guest transactions efficiently and professionally.
  • Ensure accuracy in all billing processes.

Team Support & Coordination

  • Collaborate with kitchen, hostesses, and fellow service colleagues to ensure seamless operations.
  • Assist in tea service and beverage preparation when required.
  • Communicate guest feedback or service concerns promptly.
  • Support banquet or group dining operations when applicable.

Service Excellence & Brand Standards

  • Uphold Mandarin Oriental’s Pillars of Legendary Quality Experiences.
  • Maintain impeccable grooming, hygiene, and uniform standards.
  • Demonstrate strong product knowledge of Chinese cuisine and dining etiquette.
  • Deliver service with warmth, cultural sensitivity, and attention to detail.

Pre-Opening Responsibilities

  • Participate in training programs, SOP briefings, and service simulations.
  • Assist in setting up restaurant areas, service stations, and specialty equipment (e.g., tea service items).
  • Support pre-opening operations as required.

Qualifications & Experience

  • Diploma in Hospitality or related field preferred.
  • Previous experience in Chinese restaurant service is an advantage.
  • Basic knowledge of Chinese cuisine, dining styles (e.g., family-style, sharing), and tea service preferred.
  • Strong communication and interpersonal skills.
  • Guest-focused with a positive and service-oriented attitude.
  • Ability to work effectively in a fast-paced environment.
  • Strong teamwork and coordination skills.
  • Professional grooming and presentation.
