About the job

Based within the Kitchen in Guangzhou, the Chinese Brasserie Concept Wok I is responsible for assisting the Executive Chinese Chef in running the assigned kitchen efficiently. He/she is to ensure, that the agreed quality, hygiene and other standards are kept or surpassed at all times. The Chinese Brasserie Concept Wok I reports to the Chinese Brasserie Concept Executive Chef.

 

As Chinese Brasserie Concept Wok I, you will responsible for the following duties:

  • Check standard recipes and food preparations, ensuring proper portion control, uniformity of taste and quality.
  • Monitor daily food requisitions and kitchens transfers in order to achieve the stock rotation desired.
  • Report problems, failures of machines or small equipment and follow up on it.
  • Be responsible and accountable for the assigned section’s food cost as well as kitchen supplies, kitchen energy costs and kitchen utensils.
  • Find ways to improve the efficiency of the operations, which will benefit our clients.
  • Co-operate with and drive forward the implementations of minimum operating standards in all Food and Beverage kitchens through close follow-up with Outlet Managers.
  • Plan to co-ordinate and supervise all menu implementations in a timely manner.
  • Assist in the preparation and control of daily and weekly market lists.
  • Create and develop new dishes and recipes by keeping up with the latest market trends.
  • Constantly strive to improve kitchen operating procedures.
  • To hold all recipes in master files for future reference.
  • Carry out other duties as and when requested by management.
  • Identify areas of improvement through suggestions.

  • College degree/diploma or above from an accredited culinary institution.
  • At least 2 years working experience in 5 star hotel or high profile restaurant in similar capacity.

关于职位

该职位位于广州文华东方酒店厨房部,中式小馆概念头锅负责协助中式小馆概念行政总厨,他/她必须时刻确保本档口产品质量,卫生状况及其他工作标准达到或超过酒店标准规定。中式小馆概念头锅向中式小馆概念行政总厨汇报。

 

作为中式小馆概念头锅,你将负责以下职责:

  • 实施检查标准料单及原料加工程序,厨房运营,出品份量及独特口味得以有效调控。
  • 监督食品申请与调拨以确保库存运转良好。
  • 及时汇报运营问题,及时汇报并跟进设备用具的维护状况,及时报损及跟进维护和维修。
  • 全面负责指定厨房食品成本,供货资源,能源成本,厨具养护。
  • 积极寻求提高厨房运因效率,以提高客户满意度。
  • 与餐厅经理紧密合作已建立并跟进以实现的最少餐饮运营标准。
  • 有计划地制定菜单并及时落实。
  • 协助每日即每周市场单规划。
  • 依据市场动向及时推出新菜品。
  • 坚持不懈地提高厨房运营效率。
  • 及时归纳所有菜单已供日后参考。
  • 在运营需要时确保出勤。
  • 虚心接受改进建议。
