About the Job:


The Chef de partie at Mandarin Oriental Paris, is responsible for the production of food in the station assigned to him/her by the Executive Chef. He/she must maintain quality, service and product standards. In addition, he/she must supervise the subordinates of his/her Party.

As a Chef de partie you will be responsible for the following duties:

  • Prepare and produce a wide range of pastries, desserts, and baked goods in accordance with established recipes and quality standards
  • Accurately weigh, measure, and mix ingredients to ensure consistency and product quality
  • Organize and plan daily production to meet service demands and deadlines
  • Ensure proper storage and handling of ingredients in compliance with food safety regulations (HACCP standards)
  • Maintain cleanliness and hygiene of the workstation, tools, and kitchen environment
  • Monitor baking and pastry preparation processes to guarantee optimal results
  • Assist in developing new recipes and seasonal creations
  • Manage stock levels and report shortages or supply needs
  • Work efficiently as part of a team in a fast-paced environment
  • Ensure attractive presentation and finishing of products for display or service

As Chef de partie, We Expect from You:

  • A strong passion for pastry arts and a genuine ambition to grow within a high-end pastry or luxury hospitality environment
  • Previous experience in a similar role within a pâtisserie, bakery, fine dining restaurant, or upscale hotel is preferred
  • Excellent attention to detail, especially in precision, presentation, and finishing of pastries
  • Ability to perform efficiently under pressure in a fast-paced production environment
  • Fast learner, with the ability to follow recipes and instructions from senior pastry chefs with accuracy
  • Team-oriented mindset with strong communication and interpersonal skills
  • Fluent in French, both written and spoken
  • Solid knowledge of pastry techniques, kitchen hygiene regulations, and food safety standards (HACCP)
  • Positive attitude with a proactive and hands-on approach in the kitchen
  • Pastry diploma or equivalent professional qualification in baking and pastry arts
  • Highly organized, methodical, and rigorous in daily tasks and production planning
  • Enthusiastic, with a strong commitment to quality and excellence in pastry creation
