About the job

Based at the San Clemente Palace within the Culinary Department in Venice, the Chef de Partie is responsible for running a specific section of the kitchen independently, ensuring the preparation and presentation of high-quality dishes in accordance with the resort's culinary standards. The Chef de Partie reports to the Sous Chef.

As Chef de Partie, you will responsible for the following duties:

  • Oversee the day-to-day operations of an assigned kitchen section (e.g. grill, pastry, fish, sauces)
  • Prepare and present dishes consistently and in line with established recipes and plating standards
  • Ensure all mise en place is ready ahead of service and kept to high hygiene standards
  • Supervise and support Commis Chefs and Demi Chefs de Partie in their tasks
  • Monitor food stock levels, report shortages, and assist in inventory control
  • Maintain cleanliness, organization, and compliance with HACCP and food safety regulations
  • Communicate effectively with other sections and the front of house when required
  • Contribute to menu development and continuous improvement of dishes 

As Chef de Partie we expect from you: 

  • Proven experience in a similar role within upscale or luxury hospitality kitchens
  • Expertise in one or more kitchen sections and strong all-round culinary skills
  • High standards of cleanliness, organization, and attention to detail
  • Ability to work efficiently under pressure and deliver consistent quality
  • Team-oriented mindset and the ability to supervise junior team members
  • Flexibility to work rotating shifts, including weekends and holidays
  • Culinary diploma or equivalent professional training
