As a Chef de Cuisine, you will be responsible for the following duties: 

  • Plan in conjunction with the Executive Chef and Outlet Managers activities, promotions, menu implementations according to the annual marketing plans. 
  • Guide the kitchen section chefs and all his subordinated in decision-making and judgement.
  • Ensure that positive working relations with non-Food and Beverage departments are fostered giving co-operation at all times.
  • Handle customer comments and complaints and take swift corrective action after consultation with the department head concerned.
  • Be responsible and accountable for the overall food cost as well as kitchen supplies, kitchen energy costs and kitchen utensils.
  • Find ways to improve the efficiency of the operations, which will benefit our clients.
  • Constantly finding ways to further improve the Food cost through strategic purchasing, without negatively affecting pre- determined quality standards.
  • Control kitchen manpower distribution throughout the kitchen sections, by overseeing the scheduling of all sections and makes adjustments anticipating unscheduled business.

As a Chef de Cuisine, we expect from you: 

  • Degree or diploma in Culinary Arts, Hospitality Management, or related discipline preferred.
  • Minimum 8 years of progressive culinary experience in 5 Star luxury hotels, upscale restaurants, or high-volume international dining operations.
  • Proven experience managing all-day dining, buffet, and à la carte operations within a 5 Star luxury hotel environment.
  • Fluent English and Mandarin communication skills (spoken and written).
  • Strong understanding of HACCP, food hygiene, sanitation, and occupational health & safety standards.

The Chef de Cuisine is responsible for leading the culinary operations of an assigned restaurant outlet, ensuring exceptional food quality, consistency, creativity, and service excellence in line with Mandarin Oriental’s luxury standards. During the pre-opening phase, this role will play a key part in translating the restaurant concept into an exceptional guest dining experience through menu development, kitchen setup, recipe standardization, brigade recruitment, and operational readiness. Post-opening, the role will oversee daily kitchen operations, colleague development, food safety, and financial performance, while continuously elevating the outlet’s culinary reputation.
